A nutritious gut-healthy dinner packed full of punchy flavour and texture that’s ready in just 30 minutes. It covers everything you need for a balanced meal: Protein, Fibre, Fats and Ferments!
Serves 2
Ingredients:
• 2 salmon fillets
• 1 pack pre-cooked microwaveable rice
• 1 tbsp gochujang
• 3 tbsp neutral oil
• 1 cup edamame
• ½ cucumber, diced
• 4 tbsp Original kimchi
Dressing:
• 2 tbsp rice vinegar
• 1 tbsp soy sauce
• 1 tbsp sesame oil
• 1 tsp honey
Method:
1. Preheat oven to 180°C.
2. Mix gochujang + oil. Stir most of it through the rice (save 1 tbsp).
3. Spread rice on a lined tray, bake for 25 mins, tossing every 10.
4. After 10 mins, add salmon to the tray, glaze with reserved mix.
5. While baking, prep: edamame, cucumber, kimchi & mix dressing.
6. Once rice is crispy & salmon cooked, combine rice with veg & dressing. Serve with salmon on the side.
