Ingredients:
• 2 salmon fillets (poached & flaked)
• 1 pouch high quality pre-cooked beans
• 1 cup mixed diced cucumber and celery
• ¼ cup rocket
• 4 TBS Fennel, Apple & Dill Sauerkraut
• 2 TBS finely diced fresh dill
For the dressing:
• 3 TBS EVOO
• 2 TBS lemon juice
• 1 tsp honey
• Good pinch of salt, and a pinch of pepper
