Speedy Spicy Kimchi & Peanut Noodles

Hungry but don’t have time to cook?! These spicy peanut butter noodles are just for you. Ready in just 15 minutes and packed full of flavour.

Serves 2
Ingredients:
• 2 heaped TBS peanut butter
• 2 TBS light soy sauce
• 1 TBS rice vinegar
• 1 TBS sesame oil
• 1 TBS crispy chilli
• 1 garlic clove (minced)
• 1 tsp honey
• 1-2 TBS warm water as needed to loosen
• 2x noodle nests
• 2x shredded chicken breast (or protein of your choice)
• 4 TBS Original kimchi (diced)
• ½ C Edamame
• ½ C Thinly sliced red cabbage
• 1x Julienned carrot

Optional toppings: thinly sliced spring onion greens, sesame seeds

Method:
1. Place all sauce ingredients in bowl and mix thoroughly. Loosen with a little water if necessary. You should be left with a thick, glossy sauce
2. Prep veg
3. Cook noodles according to packet instructions
4. Drain noodles and arrange in a bowl together with your protein of choice, kimchi and vegetables.
