Tomato & Dumpling Salad with Kimchi & Zingy Sesame Vinaigrette

An unexpected and delightful fusion of flavours that’s so simple to prepare that it’ll be on repeat in your kitchen. Gorgeous heritage tomatoes paired perfectly umami kimchi and a sweet, salty, sour dressing. Serve alongside your favourite dumplings for a nourishing lunch or light dinner.

Serves 2
Ingredients
• Mixed tomatoes – we love heritage and cherry varieties
• 2 tbs Original Kimchi
• ¼ small bunch of Basil
• 12x frozen dumplings

For the dressing
• 2 tbs rice vinegar
• 1 tbs light soy sauce
• 1 tbs sesame oil
• 1 tsp honey
• 1 tsp crispy chilli (optional)

Method
1. Prepare your dumplings according to packet instructions.
2. Mix the tomatoes and basil and season with a little salt.
3. Prep the dressing and pour over the dumplings and tomatoes. Add the kimchi and give everything a good mix.
